Honey Roasted Figs

These versatile and luscious honey-soaked roasted figs are a wonderful way to show your gratitude to your deities, loved ones, and yourself!

Ingredients

  • 8 oz fresh figs, cut in half (blessings, enlightenment, wisdom)
  • 1/4 cup honey (abundance, beauty, prosperity)
  • 1 tsp vanilla paste or 1 vanilla bean, scraped (Trust, clarity, comfort, gentle love)
  • 2 Tbsp water (cleansing, purification)

Instructions

To prepare the figs
  1. Preheat your oven to 350 degrees F and prepare a small, oven safe skillet with a small amount of cooking spray (or melted butter if you prefer).
  2. In a small bowl, mix together the honey, vanilla bean paste, and water to make a slightly loose syrup.
  3. Place your cut figs, flat side down onto the skillet and pour the syrup over them.
  4. Place into the oven and cook for 10-14 minutes, or until the figs have softened and the syrup is boiling. Remove from the oven and allow to cool for 2-3 minutes.
  5. When the figs have cooled just slightly, carefully flip them over with a spatula and spoon the thickened syrup over each fig.
Serving Suggestions
  1. For a sweet addition to a breakfast or brunch gathering, spoon the cooled figs and syrup over Greek yogurt or oatmeal. Granola or toasted nuts add a great texture too!
  2. These make a delicious compote to top a baked brie en croute or as a unique accompaniment for a charcuterie board.
  3. Try layering the figs into to a grilled cheese sandwich for the perfect sweet and salty combination.
  4. Topping roasted meats such as beef, pork, or chicken pair with both the figs and a drizzle of the syrup with help accent the savory flavors of the meats.
  5. Pair the cooled figs with creamy goat,blue,or feta cheese on top on of your favorite greens to create an elegant springtime salad. You can also use the syrup to help make a homemade vanilla fig vinaigrette by whisking together 2 Tbsp of the syrup with 3 Tbsp champagne vinegar, 1 Tbsp Dijon mustard, 6 Tbsp of olive oil, and salt and pepper to taste.
  6. While still warm, spoon the figs and syrup over a couple of scoops of vanilla ice cream for a stunningly simple dessert!
